I am thrilled to share that I have just received my certification in plant-based nutrition through The Center of Nutrition Studies at Cornell University led by Dr. T. Colin Campbell, PhD.!
Dr. Campbell, a professor of Nutritional Biochemistry at Cornell, has been at the forefront of nutritional science, education, and research for decades. His expertise and scientific interests have focused on the relationships between diet and disease, especially the causation of cancer. Cited as the “Grand Prix of epidemiology” by the New York Times, the China Project has been Dr. Campbell’s defining work and is one of the most comprehensive studies of health and nutrition ever conducted.
I feel so fortunate to have had the opportunity to expand my knowledge of whole food, plant-based nutrition from this incredible course of study. As many of you know, my plant-based health journey started five years ago when I decided to become completely vegan. In an effort to improve my health, I began eliminating dairy, processed foods, sugars, oils, and preservatives out of my diet and focused completely on whole food, plant-based ingredients – the results were extraordinary and TaazaTable was born. During my journey, I watched “Forks Over Knives” which featured Dr. Campbell and read his book, “The China Study”; both of which left a strong, lasting impression on me. It was this regard for Dr. Campbell and my desire to learn more about the role of nutrition in treating chronic diseases that drew me to the plant-based nutrition program at the Center of Nutrition Studies.
Through expert lectures, detailed scientific study, and actual case studies, the course of study demonstrated that a diet consisting of plant-based foods has the power to not only prevent, but reverse all chronic diseases like cancer, diabetes, obesity, and heart disease. I was incredibly encouraged to learn of the growing body of scientific research that affirms the message that is central to TaazaTable and my own belief – that WE are the creator of our own destiny by the food choices we make and the healthy lifestyle we choose to create.
