Comfort food at its best; this rich and creamy oat bran is perfect for cozy morning breakfasts! My family loves the fine oat bran texture, granola crunch, sweet cinnamon / maple syrup, and fun fruit toppings. Best of all, this dish jump starts the day with a healthy serving of fiber, iron, and protein.
My dear friend, Shamini, and her husband, Vikas, introduced me to oat bran and I have never made oatmeal since. You will find that the texture of oat bran, when slowly cooked, is much finer and more pleasing than oatmeal. Give this warm and satisfying morning meal a try and discover why oat bran should to be on your breakfast / brunch menu. Enjoy!
1 cup oat bran (Recommended brand:Bob's Red Mill)
4 cup coconut milk (Recommended brand: So Delicious)
3 tbsp maple syrup
1/4 tsp cinnamon powder
1/4 cup chia seeds
1/4 cup hemp seeds
1/2 cup granola
Heat a stainless pan on medium heat. Add the oat bran and toast it for a minute stiring it from side to side.
Add 3 cups of coconut milk. Let it come to a boil.
Add maple syrup and cinnamon. Whisk it well cook on low heat for about 20 minutes letting the oat bran thicken.
Switch off the stove and let the oat bran rest covered for 10-15 minutes. The oat bran will cook with steam and further thicken (this step cuts the cooking time as you can walk away and finish other things)
At the time of serving, warm the oat bran again to a boil with 1 cup of remaining coconut milk, whisking to avoid any clumps until smooth.
For serving: take a wide bowl, fill halfway with oat bran, sprinkle chia seeds, hemp seeds, granola, add a dusting of cinnamon, drizzle of maple syrup, and fresh berries.
You can add any of your favorite toppings to the oat bran: fresh fruits, toasted coconut chips, cranberries, nuts....be creative....Enjoy!!
